Le Ratafia
Ratafia is a sweet wine made from Pinot Noir juice fortified with fine champenoise. It matures for 12 months in oak barrels, followed by 12 months in vats, which gives it a unique complexity. Its color is a beautiful light amber with bright reflections. On the nose, it reveals subtle aromas of almond and spices, while the palate, supple and creamy, blossoms on notes of ripe apricot and cocoa.
Appreciated by winemakers for its ability to vary the traditional bubbles of Champagne during the aperitif, this Ratafia goes wonderfully with refined dishes such as foie gras, mature cheeses such as Tomme de Savoie or Cantal, or even a chocolate fondant for a gourmet touch.
